SUMMER!! ENJOY SOME GREAT COOL SMOOTHIES



1. Banana Blend 2 bananas, 1/2 cup each vanilla yogurt and milk, 2 teaspoons honey, a pinch of cinnamon and 1 cup ice.

2. Strawberry-Banana Blend 1 banana, 1 cup strawberries, 1/2 cup each vanilla yogurt and milk, 2 teaspoons honey, a pinch of cinnamon and 1 cup ice.

3. Strawberry Shortcake Blend 2 cups strawberries, 1 cup crumbled pound cake, 1 1/2 cups each milk and ice, and sugar to taste. Top with whipped cream and more strawberries.

4. Triple-Berry Blend 1 1/2 cups mixed blackberries, strawberries and raspberries with 1 cup each milk and ice, and sugar to taste.

5. Raspberry-Orange Blend 1 cup each orange juice and raspberries, 1/2 cup plain yogurt, 1 cup ice, and sugar to taste.

6. Peach-Mango-Banana Blend 1 cup each chopped fresh or frozen peaches and mango, 1 cup each plain yogurt and ice, 1/2 banana, and sugar to taste.

7. Honeydew-Almond Blend 2 cups chopped honeydew melon, 1 cup each almond milk and ice, and honey to taste.

8. Cantaloupe Blend 2 cups chopped cantaloupe, the juice of 1/2 lime, 3 tablespoons sugar, 1/2 cup water and 1 cup ice.

9. Carrot-Apple Blend 1 cup each carrot juice and apple juice with 1 1/2 cups ice.

10. Spa Cucumber Peel, seed and chop 2 medium cucumbers. Blend with the juice of 1 lime, 1/2 cup water, 1 cup ice and 3 to 4 tablespoons sugar or honey.101201_FNM_SmoothSpreadLV3_204.tif

CREAM CROCK POT MAC N CHEESE




Creamy Crock Pot Mac ‘n Cheese

Adapted from Slow-Cooker Mac & Cheese in Gooseberry Patch's 303 Simple & Satisfying Recipes
Serves: 4-6 servings
Ingredients
  • 8 oz elbow macaroni, cooked
  • 2 T oil
  • 12 oz can of evaporated milk
  • 1½ c milk
  • 3¾ c pasteurized processed cheese spread, cubed
  • ½ c melted butter
  • Optional: ¼ c shredded cheddar cheese, garnish
Instructions
  1. Lightly toss your cooked macaroni in your oil until all the noodles are coated.
  2. Spray your crock pot with cooking spray.
  3. Pour in your macaroni.
  4. Add remaining ingredients to your crock pot and stir.
  5. Cover and cook on low for 3-4 hours. Be sure to stir it every once in awhile.
  6. Sprinkle some shredded cheese on top and serve

THIS RECIPE WAS GIVEN BY OUR OWN ELDER MILLER'S MOM.

CRUST AND TOPPING
1 POUCH OATMEAL COOKIE MIX            1/2 C. CRUSHED GINGER SNAP COOKIES
1/2 C. CHOPPED PECANS OR WALNUTS         1/2 C. COLD BUTTER

FILLING
2 - 8 0Z PKGS CREAM CHEESE                     1 C. SUGAR
1 C. CANNED PUMPKIN                                1 TBSP PUMPKIN PIE SPICE
2 TBSP WHIPPING CREAM                           2 EGGS

TOPPING
CHOCOLATE SYRUP AND CARAMEL SYRUP

INSTRUCTIONS
HEAT OVEN TO 350 DEGREES.   STIR TOGETHER COOKIE MIX, CRUSHED COOKIES AND NUTS.  CUT IN BUTTER UNTIL MIXTURE IS CRUMBLY.  RESERVE 3/4 C. FOR TOPPING.  PRESS REMAINING IN UNGREASED 9 X 13 PAN.  BAKE 10 MINS.  COOL 10 MINS.
IN A LARGE BOWL BEAT CREAM CHEESE AND SUGAR ON MEDIUM SPEED UNTIL SMOOTH.  ADD REMAINING FILLING INGREDIENTS, BEAT UNTIL WELL BLENDED.  POUR OVER WARM COOKIE BASE.  SPRINKLE RESERVE TOPPING OVER FILLING.  BAKE FOR 35 -40 MINS, UNTIL CENTER IS SET.  COOL 30 MINS.  REFRIGERATE 2 HRS.  THEN DRIZZLE WITH SYRUPS.

PICKELD OKRA SANDWICHES

Pickled Okra Sandwiches  THIS JUST SEEMED SUPER INTERESTING.  I'M ALWAYS LOOKING FOR SOMETHING DIFFERENT TO DO WITH OKRA BESIDES FRY IT OR PUT IN INTO A SOUP.

Ingredients

  • 1 (24 oz) loaf sliced white bread
  • 1 (8 oz) package cream cheese, softened
  • 1 (16 oz) jar pickled okra
  • 1 cup fresh parsley, finely chopped

Preparation

Remove crusts from bread. With a rolling pin, roll slices very thin. Coat each slice with cream cheese and place an okra spear in center; roll up. Spread a light coat of cream cheese on each rolled-up sandwich (I like to use my fingers to spread the cream cheese). Roll sandwich in finely chopped parsley. Cut in half, if desired.
